DC 7805 is a catch-all code for scars that cause functional limitations not captured by the other scar codes. This includes linear scars, scars that limit the range of motion of a nearby joint, scars that cause muscle weakness or nerve effects, and any other disabling effects of scars. This code directs the VA to rate the scar based on whatever body system it affects — meaning a scar limiting knee movement is rated under knee limitation of motion criteria, for example.

Medical opinions explaining how the scar causes the specific limitation connect the scar to the functional effect. Service records connecting the scar to an in-service injury establish the foundation.
DC 7800-7804 rate scars based on their characteristics (size, location, pain). DC 7805 rates scars based on what they prevent you from doing — limited motion, nerve damage, muscle weakness, etc. You can receive ratings under multiple scar codes for the same scar if it qualifies under each one.
Yes, if the causes are different. For example, if you have a knee injury rated at 10% and the surgical scar from knee surgery separately limits your knee motion or causes pain, those can be rated under separate codes. The key is that each rating compensates for a distinct effect.
